Bánh tráng trộn is the Vietnamese street-food salad that mixes rice-paper strips with quail eggs, dried shrimp and chili dressing.
The dish is associated especially with southern Vietnam and became a popular snack sold by street vendors. Its name means “mixed rice paper”: bánh tráng means rice paper, while trộn means mixed. Vendors cut or shred chewy rice paper and toss it with ingredients such as dried shrimp, shredded green mango, Vietnamese coriander, peanuts, fried shallots and a salty or spicy dressing.
Recipes vary considerably by vendor. Some use beef jerky, tamarind sauce or chili salt, so the exact combination is not fixed. Quail eggs are a common topping, but they are not the only ingredient that identifies the dish.
Bánh tráng trộn is different from bánh tráng nướng, another popular snack. The latter is grilled rice paper topped with ingredients, while bánh tráng trộn is assembled by mixing cut pieces with sauces and garnishes.
