The dish is strongly associated with Maracas Beach in Trinidad, where vendors serve fried fish inside a round bake. “Bake” in this name refers to a fried bread rather than an oven-baked roll. Shark is the traditional fish, although other fish may be used when shark is unavailable or regulations and supply affect the catch.
Toppings and sauces can include lettuce, tomato, cucumber, pineapple, pepper sauce, garlic sauce, and other condiments. The combination makes the dish a substantial beach meal with contrasting textures and flavors.
Bake and shark is sometimes reversed in casual speech as “shark and bake,” but the established dish name is bake and shark. It is also distinct from doubles, whose filling is curried chickpeas and whose bread is bara.
