What roll is made of tofu skin filled with meats and sliced vegetables?

The story behind the answer

A roll made from tofu skin and filled with meats and sliced vegetables is a tofu skin roll. It is a dim sum dish found in Hong Kong and in Chinese restaurants overseas.

The outer wrapper is tofu skin, the thin sheet that forms when soy milk is heated and a film of coagulated soy protein develops on its surface. In Chinese cooking, this ingredient is also called bean curd skin. Depending on the recipe, the filling may contain pork, beef, fish, shrimp, chicken, vegetables or combinations of these.

The steamed version is especially associated with yum cha. It is often wrapped in dried tofu skin, then softened during cooking; bamboo shoots are a frequent addition. Fried versions are also served, with a crisp exterior rather than the soft texture of steamed rolls.

This dish is easy to confuse with a rice noodle roll, whose wrapper is made from rice batter, or a spring roll, whose wrapper and filling vary. The tofu skin is the defining feature here, not one particular meat or vegetable.
