Sabzeh is the Persian name for the traditional Nowruz decoration made from sprouted wheat, barley, mung beans, or lentils.
Families grow the sprouts in a dish before Nowruz and place them on the Haft-sin table. Their green color and rapid growth symbolize renewal, rebirth, and the arrival of spring.
Sabzeh is one of the most recognizable elements of Haft-sin, whose name refers to seven displayed items beginning with the Persian letter sin. The exact objects can vary between households, and sabzeh is not necessarily made from one single plant.
At the end of the holiday, many Iranian families take the sabzeh outdoors on Sizdah Bedar. It may be placed in running water or left in nature, a custom associated with ending the festival and casting away misfortune.
