The Turkish ground meat dish baked on a flatbread is lahmacun.
Lahmacun is a thin wheat flatbread spread with minced meat—usually beef or lamb—along with vegetables, herbs and spices such as onion, tomato, parsley, paprika and chili. It is baked until the topping cooks and the crust becomes crisp.
Although strongly associated with Turkey, lahmacun has broader Levantine roots. Its name comes from Arabic lahm bi ʿajīn, meaning “meat with dough,” and similar versions are popular in Syria, Lebanon, Armenia and other parts of the region. A 13th-century Syrian cookbook contains an early recipe for minced meat spread over dough and baked.
It is sometimes called “Turkish pizza,” but that comparison can mislead: traditional lahmacun is thinner and normally has neither mozzarella nor tomato sauce. In Turkey it is commonly rolled with parsley, onion, salad, lemon or pickled vegetables.
