Ash reshteh is the Persian herb-and-noodle soup traditionally associated with Nowruz and other celebrations.
The soup contains herbs, legumes, noodles called reshteh, and often kashk, a fermented whey product. Common herbs include parsley, cilantro, spinach, and green onions, while chickpeas, lentils, and beans add substance. Fried onions, garlic, and mint are frequently used as toppings.
Ash reshteh is served in Iran and in Persian communities during Nowruz, the Iranian New Year, which begins at the spring equinox. It is also prepared for other gatherings and religious occasions. The noodles are sometimes interpreted symbolically as representing life’s paths, though serving customs differ.
Ghormeh sabzi is another famous Iranian herb-based dish, but it is a stew usually served with rice and does not contain the characteristic noodles of ash reshteh. Abgoosht, also called dizi, is a different meat-and-legume dish.
