Sinangag is the Filipino garlic fried rice commonly served with eggs and meat at breakfast.
The dish is made by stir-frying cooked rice with abundant garlic, usually in oil. Leftover rice is especially suitable because its grains are drier and separate more easily in the pan. Salt, pepper, and scallions may also be used.
Sinangag is a central part of the Filipino breakfast combination called silog. In a name such as tapsilog, “-silog” refers to sinangag and itlog, the Filipino word for egg, while the first part identifies the accompanying meat.
Sinangag is different from arroz caldo, a soft rice porridge, and from pandesal, a bread roll. It is also not limited to breakfast: Filipino households may serve garlic fried rice with other meals whenever cooked rice is available.
