Herb Peterson, a McDonald’s franchise owner and former advertising executive in California, developed the sandwich with his assistant, Donald Greadel. Peterson wanted a breakfast item inspired by eggs Benedict, but adapted it for quick preparation and eating on the go. The English muffin replaced an English muffin half used in the traditional dish, while a poached egg, Canadian bacon, and cheese formed the central filling.
The Egg McMuffin became a foundational item in McDonald’s breakfast business. Its success helped encourage the chain to expand breakfast service and develop a larger morning menu.
