What is the name of Korean braised beef short ribs?

The story behind the answer

What is the name of Korean braised beef short ribs? The dish is called galbi-jjim, also written galbijjim.

Galbi-jjim is a Korean jjim, or slowly braised dish, made from galbi, meaning short ribs. Beef is the usual version for this quiz’s wording, although pork short ribs can also be prepared as dwaeji-galbi-jjim. The ribs are typically simmered in a savory-sweet sauce based on soy sauce, garlic, sesame oil, ginger, pepper, and sugar.

Cooks often add carrots, chestnuts, shiitake mushrooms, jujubes, ginkgo nuts, or pine nuts. The meat is trimmed and scored so the seasoning can penetrate, then cooked slowly until tender. It is generally served in a bowl and is associated with festive or special-occasion meals.

Galbi-jjim is different from grilled galbi, which is cooked over direct heat, and from bulgogi, which uses thinly sliced marinated beef. Tteokgalbi is another rib-related dish, but it is made from minced or finely chopped meat formed into patties rather than whole braised ribs.
