Boxty developed as a practical, filling dish in potato-growing communities. Its fine, smooth texture distinguishes it from several other potato cakes, including hash browns and the coarser forms of potato bread. An Irish rhyme says, “Boxty on the griddle; boxty on the pan,” reflecting its place in domestic cooking.
