Ube cheesecake is also known as purple yam cheesecake. The name translates its defining ingredient into English: ube is the Filipino term for purple yam.

This Filipino cheesecake usually has a crushed graham-cracker base and a creamy upper layer made with cream cheese and ube halaya. Ube halaya is a sweet purple-yam preparation made from mashed yam, milk or condensed milk, sugar, and butter. The dessert’s vivid purple color and mildly sweet, nutty flavor come from the ube.

Ube cheesecake may be baked or simply refrigerated, and both versions are generally chilled before serving. It should not be confused with ube cake, which is usually a Filipino chiffon or sponge cake flavored with purple yam. Nor is ube the same ingredient as taro, although the two are sometimes confused because both can appear pale purple in desserts.
