What Greek dish consists of grilled meat on skewers?

The story behind the answer

The Greek dish of grilled meat on skewers is souvlaki.

Souvlaki is made from small pieces of meat grilled on a skewer. Pork is especially common in Greece and Cyprus, though chicken and lamb are also used. It may be eaten directly from the skewer, served as a plated meal, or wrapped in pita with tomato, onion, tzatziki, and sometimes fried potatoes.

The word is related to the Greek souvla, meaning spit, and is a diminutive form. Skewer cooking has much older roots: archaeological finds from Bronze Age Greece include ceramic cooking supports associated with roasting meat. Modern souvlaki became widely established as Greek fast food after World War II and spread through vendors and takeaway shops during the 1960s.

Regional terminology causes confusion. In Athens, kalamaki commonly means the skewer itself, while souvlaki may refer broadly to a pita wrap or fast-food serving. Gyros is different: it is meat cooked on a vertical rotating spit and shaved into portions. Saganaki is fried cheese, not grilled meat.
