Common dolphinfish
What fish is often called mahi-mahi in restaurants? The common dolphinfish is the fish commonly marketed and served as mahi-mahi.
Its scientific name is Coryphaena hippurus, and it is a fast, surface-dwelling fish of tropical, subtropical, and temperate offshore waters. The name mahi-mahi comes from Hawaiian and means “very strong,” using reduplication for emphasis. The species is also called dolphinfish or dorado, but it is not related to marine dolphins; “dolphinfish” is simply an older common name for the fish.
Mahi-mahi have a long dorsal fin extending almost from the head to the tail. Adult males often develop a prominent, squared forehead, while females have a more rounded head. They are active predators that eat flying fish, squid, crabs, mackerel, and other small fish, and they often gather around floating objects where prey concentrates.
Restaurants use mahi-mahi because its flesh is mild and firm and turns white when cooked. A nearby naming trap is the word dorado: in some regions it refers to mahi-mahi, while in others it can mean a different freshwater fish. The related pompano dolphinfish is a separate species.
