The dish sen chan pad thai was named after which Thai province?

The story behind the answer

The dish sen chan pad thai was named after Chanthaburi Province in eastern Thailand.

“Sen chan” means Chan noodles, linking the dish to Chanthaburi, a province known for rice-noodle production. The noodles are typically used in a regional style of pad thai that may include crab, reflecting Chanthaburi’s coastal food traditions.

Pad thai itself became prominent in the mid-20th century, when the government of Prime Minister Plaek Phibunsongkhram promoted noodles during wartime rice shortages and a broader nation-building campaign. That history explains why a local noodle variety became associated with Thailand’s national dish.

The name is sometimes confused with Sukhothai because Sukhothai also has a well-known regional noodle dish. Phuket and Chiang Mai are likewise famous food destinations, but neither province is the namesake of sen chan pad thai.
