Shell steak also goes by the name Kansas City Strip. It is a strip steak cut from the short loin, specifically the longissimus muscle, which does relatively little work and is therefore naturally tender.

The same cut appears under several regional or retail names, including New York strip, strip steak, top loin steak, club steak, and boneless shell steak. “Kansas City Strip” commonly refers to the bone-in version, while “New York strip” often describes the boneless version, although naming practices vary among butchers and regions.

Shell steak is sometimes confused with a T-bone or porterhouse because it comes from the same short-loin area.
