Pho ga features which type of meat?

The story behind the answer

Phở gà features chicken. The Vietnamese name combines phở with gà, the word for chicken, and identifies a version whose broth and meat come from chicken rather than beef.

Chicken pho usually uses chicken meat and bones, simmered with many of the same spices found in beef pho. Common aromatics include onion, ginger, cinnamon, star anise, coriander, and other warm spices. The finished bowl may contain sliced breast or thigh, scallions, cilantro, and regional herbs or garnishes.

Phở gà appeared later than the earliest beef-centered forms of pho and is often dated to the late 1930s. One explanation links its rise to restrictions on beef availability on certain market days. It is distinct from phở bò, which uses beef meat and beef bones, although both share the characteristic rice noodles and aromatic broth. Duck and pork may appear in other Vietnamese noodle soups or specialty pho variations, but chicken is the canonical answer here.
