Nabeyaki ramen is a specialty of which city in Kochi Prefecture?

The story behind the answer

Nabeyaki ramen is a specialty of which city in Kochi Prefecture? Nabeyaki ramen is a specialty of Susaki.

Nabeyaki ramen is the signature local ramen of Susaki City in Kochi Prefecture on Shikoku. The name nabeyaki refers to cooking or serving food in a hot pot, and the ramen traditionally arrives still boiling in an enamelled, earthenware or cast-iron vessel.

The bowl typically features a light but savory chicken-bone broth seasoned with soy sauce, thin firm noodles, green onions, chikuwa fish cake and an egg. The egg can be broken into the steaming soup so its yolk enriches the broth as it cooks. Takuwan, a Japanese pickled radish, is also associated with the local serving tradition.

The dish is often connected with Taniguchi Shokudo, a former Susaki eatery credited with developing it. Susaki’s specialty should not be confused with ordinary nabeyaki udon, another Japanese hot-pot noodle dish. Nabeyaki ramen is also found elsewhere in western Kochi, but Susaki is the canonical city associated with it.
