The first Rubio’s restaurant opened in San Diego in 1983. It began at a former Orange Julius location on Mission Bay Drive in the Pacific Beach area, establishing the restaurant chain that would become known for Baja-style fish tacos.
Founder Ralph Rubio got the idea after tasting fish tacos during a trip to San Felipe, Baja California. He brought the concept back to his hometown and opened a small restaurant serving fish tacos alongside other items, including French fries and calamari. The San Diego launch connected the chain’s identity to both Southern California and the food traditions of nearby Baja California.
Rubio’s later expanded across California and into other states, becoming an important part of the American fast-casual Mexican-food movement. The year can be confused with later expansion milestones or with the opening dates of other fish-taco chains, but 1983 specifically refers to Rubio’s first restaurant in San Diego.
