The name is formed from two Swedish words: ost means “cheese,” and kaka means “cake.” Ostkaka is commonly translated as Swedish cheesecake or Swedish curd cake, although it is a distinct dessert rather than the same dish as the familiar American-style cheesecake.
Traditional ostkaka is made by curdling milk, often with rennet, and then baking the resulting curds. Two well-known regional styles come from Hälsingland and Småland. Hälsinge ostkaka tends to be smoother and firmer, while the Småland version is often softer and grainier, with ingredients such as eggs, sugar, cream, and almonds.
It is usually served lukewarm with fruit, jam, whipped cream, or ice cream. Sweden has celebrated Ostkaka Day on November 14 since 2004, adding another cultural detail to this deceptively simple name.
