Pico de gallo is a fresh salsa usually made from diced tomatoes, onion, chile peppers, cilantro, and lime juice. Because the ingredients remain raw and chunky, it is also called salsa fresca or salsa cruda.
Cilantro supplies a bright, citrus-like herbal note that distinguishes many versions from cooked tomato sauces. The herb is added shortly before serving so its fresh flavor remains prominent.
Pico de gallo is commonly served with tacos, nachos, grilled meats, and tortilla chips. Some recipes omit or reduce cilantro, but the herb is a standard component of the classic formula.
