The Tex-Mex version is especially associated with Texas and commonly appears as a breakfast dish. Cooks may add cheese, beans, avocado, or bacon, but the egg-and-tortilla combination is its defining core.
Migas is often confused with chilaquiles because both use tortilla pieces and salsa. Chilaquiles generally simmer tortilla chips in sauce, while Tex-Mex migas mixes crisp or lightly fried tortilla strips into scrambled eggs.
The word “migas” means “crumbs” in Spanish. Regional versions also exist in Spain, Portugal, and Mexico, so recipes called migas can differ substantially outside Texas.
