In Tex-Mex cuisine, lime is the citrus fruit traditionally squeezed into guacamole.
Lime juice adds acidity and helps balance the richness of mashed avocado. It also slows enzymatic browning on the exposed surface, although it does not prevent discoloration indefinitely.
A typical guacamole combines avocado with lime juice, salt, onion, chile, cilantro, and sometimes tomato. Tex-Mex restaurant versions may include sour cream or other ingredients, while regional Mexican recipes differ in texture and seasoning.
Lemon can substitute for lime in some kitchens, but lime is the conventional citrus in guacamole. The fruit should be added carefully because too much acid can overwhelm the avocado’s flavor.
