Sheep’s milk is the main ingredient of queso manchego, the famous Spanish cheese often served with tapas.

Authentic Manchego cheese is made from the milk of Manchega sheep. It is produced in the La Mancha region of central Spain and may be sold at different ages, from relatively young versions to well-aged cheeses with firmer texture and stronger flavor.

Manchego is commonly served in slices with bread, olives, quince paste, or cured meats. The patterned rind is traditionally associated with the molds used in its production, although modern manufacturing methods can reproduce the appearance.

A common mistake is to identify Manchego as a goat’s-milk cheese because goat cheese is also widespread in Spain. The protected name refers to both its production area and the use of Manchega sheep’s milk. It is therefore a regional cheese with defined specifications, not simply any Spanish sheep cheese.
