Sobrasada is the main spread on a traditional sobrasada toast.
Sobrasada is a soft, spreadable cured sausage from the Balearic Islands, especially Mallorca. It is made from ground pork, pork fat, salt, and paprika, which gives it a vivid red colour and a rich, savoury flavour. Because it remains soft rather than becoming firm like many cured sausages, it can be spread directly on bread.
As a tapa, sobrasada may be served on toast, sometimes warmed so the fat softens and the aroma becomes stronger. It can also be paired with honey or other sweet ingredients, creating the salty-sweet contrast common in Balearic cooking.
The Catalan spelling is sobrassada, while sobrasada is widely used in Spanish. Both names refer to the same Mallorcan sausage. It is not the same product as morcilla, whose defining ingredient is blood.
