Patatas alioli are Spanish potato tapas commonly finished with parsley.
The dish consists of cooked or fried potatoes dressed with alioli, a garlic-and-oil emulsion. Chopped parsley is frequently scattered over the top, adding color and a fresh herbal note to the rich sauce.
Alioli means “garlic and oil” and is traditionally associated with Mediterranean cuisine, particularly Catalonia and Valencia. Modern versions often use egg yolk or mayonnaise-style methods to help stabilize the emulsion.
Patatas alioli should not be confused with patatas bravas. Bravas are typically served with a spicy bravas sauce, while alioli potatoes are defined by their creamy garlic dressing and are commonly garnished with parsley.
