The name means “wreath cake,” and the dessert is constructed from progressively smaller rings stacked into a cone or tower. The rings are made from an almond-based mixture, usually including marzipan, sugar, and egg white.
Kransekage is often decorated with white icing and may be served with sparkling wine when the year changes. Individual rings can be separated and eaten by hand, making the tall cake suitable for a festive gathering.
It is sometimes confused with æbleskiver, another Danish celebratory food. Æbleskiver are spherical pancake-like treats, whereas kransekage is defined by its stacked almond rings.
