The dish has deep roots in Mexico. The practice of wrapping food in tortillas predates the modern nation and is associated with Indigenous food traditions of Mesoamerica. Enchiladas later appeared in written Mexican cookbooks, including El cocinero mexicano, published in 1831.

The name comes from the Spanish verb enchilar, meaning “to season with chile.” Despite the name, not every enchilada is extremely spicy: sauces can range from mild and earthy to hot and smoky. Common varieties include enchiladas verdes with green sauce, enchiladas rojas with red sauce, and enchiladas suizas, often finished with a creamy element. Burritos and tacos may also use tortillas and fillings, but the defining feature of an enchilada is its sauce-covered preparation.
