Emy Wada operated what cake boutiques in Japan?

The story behind the answer

Emy Wada operated Paper Moon Cake Boutiques in Japan.

Wada is associated with popularizing the mille-crêpes cake: a dessert made by stacking many delicate crêpes with pastry cream between them. Her Paper Moon Cake Boutiques introduced this layered cake to Japanese customers during the 1980s, helping establish it as a recognizable pâtisserie-style dessert.

The cake is often described as having about 20 thin handmade crêpes separated by light pastry cream. Its appeal comes from the contrast between the tender layers and the creamy filling; some versions also use fruit, chocolate or a caramelized surface.

Wada’s work later connected Japanese pastry culture with the American luxury cake brand Lady M. In 2001, she helped establish Lady M as a wholesale business in New York, where the company supplied cakes to hotels, restaurants and specialty retailers before opening boutiques. Paper Moon and Lady M are therefore related through Wada’s career, but they are not interchangeable names: Paper Moon refers to her earlier Japanese boutiques, while Lady M is the later international brand.
