Black Forest cake originates in Germany. Known there as Schwarzwälder Kirschtorte, it is a layered dessert traditionally made with chocolate sponge, cherries, whipped cream, and Kirsch, a clear cherry brandy associated with the Black Forest region.

The cake’s precise invention story is disputed. The name Schwarzwälder Kirschtorte was documented in 1915, while confectioner Josef Keller later claimed to have created the dessert. Another attribution credits pastry chef Erwin Hildenbrand of Tübingen around 1930. A 1927 recipe associated with Keller differs substantially from the modern multilayer version.

The “Black Forest” name may refer to the region’s Kirsch, the colors of traditional Black Forest dress, or the appearance of dark chocolate and cherries. The dessert became widely popular in Germany during the 1930s and spread internationally after World War II. In the European Union, the protected name requires Kirsch made from cherries grown in the Black Forest region.
