Asahikawa ramen is known for which main broth flavor?

The story behind the answer

Asahikawa ramen is known for which main broth flavor? Asahikawa ramen is known for a soy sauce broth.

Asahikawa ramen is the signature noodle style of Asahikawa in northern Hokkaido. Its defining flavor is shoyu, the Japanese term for soy sauce, although each restaurant balances the seasoning differently.

A notable feature is its “double soup”: seafood stock is combined with a richer broth made from pork, chicken or other animal bones. A thin layer of oil commonly floats on top, helping the soup retain heat in Asahikawa’s cold climate. The bowl is usually paired with thin, wavy noodles and toppings such as chashu, menma and green onion.

The main mix-up is with Hokkaido’s other famous regional styles. Sapporo is strongly associated with miso ramen, while Hakodate is known for salt-flavored ramen. Individual Asahikawa shops can serve salt or miso variations, but soy sauce remains the canonical regional style.
